Chaga Mushrooms, and Forest Fungi

We are dealing with a relatively rare auto-immune disease in our family, called Sarcoidosis, which is similar to Arthritis in some ways.  Making sure we maintain a really clean paleo diet seems to be the best way to control the symptoms, but a good friend of ours turned us on to Chaga mushrooms, and the more I read about these amazing fungi, the more intrigued I become.  Chaga is being used as a therapy for many ailments and diseases including cancer and HIV, and I have heard that there is ample anecdotal evidence suggesting it does certainly have healing properties.  Here is an interesting intro to Chaga.  

On our daily forest walk, we have come across many fantastic fungi, but alas, a mycologist I am not.  Last year we found heaps of Chanterelles, which are pretty much woodsy-culinary perfection, as far as I’m concerned, as the perfect accompaniment to a simple, creamy plate of scrambled eggs.  But as the weather cools even more, and the mushrooms sink back into the earth, I think we’ll have to wait for next year to go hunting for Chanterelles again.
