We are dealing with a relatively rare auto-immune disease in our family, called Sarcoidosis, which is similar to Arthritis in some ways. Making sure we maintain a really clean paleo diet seems to be the best way to control the symptoms, but a good friend of ours turned us on to Chaga mushrooms, and the more I read about these amazing fungi, the more intrigued I become. Chaga is being used as a therapy for many ailments and diseases including cancer and HIV, and I have heard that there is ample anecdotal evidence suggesting it does certainly have healing properties. On our daily forest walk, we have come across many fantastic fungi, but alas, a mycologist I am not. Last year we found heaps of Chanterelles, which are pretty much woodsy-culinary perfection, as far as I’m concerned, as the perfect accompaniment to a simple, creamy plate of scrambled eggs. But as the weather cools even more, and the mushrooms sink back into the earth, I think we’ll have to wait for next year to go hunting for Chanterelles again.
