Healthy Raw “Paleo” Chocolate Pudding Fabulousness

My parents had lots of interesting, wonderful friends. E & N lived on the UBC campus in a beautiful and understated midcentury modern bungalow, where they entertained and made truly delicious food. When I was little, I tasted chocolate mousse for the first at their house at a dinner party, and it was truly divine.  This isn’t exactly that, but it is utterly delicious, and I’m not really a chocolate fiend at all, nor do I have a sweet tooth.  I came to this after ripping across several recipes for paleo chocolate pudding online a little while ago, and decided to modify a bunch and come up with my own spin.  I don’t know where any of those recipes went to, and I am fairly confident that this could arguably be called my own creation, but if this seems too much a forgery, please let me know, I have no intention of stepping on anyone’s culinary toes.

My kids loved this stuff, drenched in a berry reduction/sauce which I made from some frozen berries and nothing else. I popped the chocolate leftovers in the fridge, and it solidified into an *incredible* ganache.  Neither iterations of this concoction even has the slightest hint of avocado-ey-ness…although I love avocadoes.

It really was quite the treat–and one can’t really go wrong with Avos, honey and coconut oil in the health department.  And as you can see, Felix quite liked it (and yes, that’s quite the mess in the background.  Not the picture-perfect mommy blogger, oh well).  In any case, if you can, I would stop everything and go ahead and whip this together.

1/4 cup coconut butter
3 large avocadoes
1/2 or 3/4 cup  cocoa powder (depending on your chocolatiness preference)
1/2 or 3/4  cup raw honey (again–adjust for your sweet tooth)
1 tsp sea salt
1 tsp vanilla

Mash the avocadoes in a bowl, along with the cocoa powder, honey, salt and vanilla.  Heat the coconut butter on the stove on very low, just to the point that it becomes liquid.  Transfer the avo-mash into your blender, and then pour the coconut butter over everything, and blend.  Ta da!  And since I take every opportunity available to consume raw egg yolks, I might consider adding one or two of those, but this is unnecessary.  Enjoy!
